It doesn’t really look like they have much of a pouch to them which a nice pouch is a requirement for me, how do they fit on you?

I once tried the Max Modal but the part where the pouch meets the back strap caused a lot of chafing due to raised thick stitching, does the Max Cotton feel the same way or did they change it?
I haven't noticed any chafing at all on my cotton ones or my microfiber ones.

it depends on how much you are used to wearing thongs. the first are the Calvin Klein thongs, they are not too expensive, they are comfortable to wear every day. I also recommend the 2(x)ist g strings, but some might find the thin wire at the back between the buttocks annoying but they have great support in the front and it feels like you are wearing nothing. finally I recommend the Diesel thongs. but you have to be careful with the sizes because the back part could be too tight.

None of those have a big enough pouch from my understanding

I advise you to try the Calvin Klein thong. I think it is the best thong on the market in terms of ergonomics, comfort and practicality. It contains the genitals well and the back leaves the butt uncovered just right. Then it depends on how gifted you are and how used to wearing a thong. Sizes are important.

I’m a big on the larger side down there so I don’t think it will work

There are tons of thongs I can think of with large pouches that will accommodate anything anyone has, McKillop is a brand that comes to mind. But you want cotton, which I hate because it doesn’t breath well. Many manufacturers of these types of garments use more synthetic materials for the breathability and stretch. Are there any other fabrics you’d be willing to consider?
